Because 妓/jiˋ (originally means female performers of music or dance etc. but their job often overlaps with sex trade so later it exclusively means female sex workers) sounds similar to 雞/ji (chicken)
鴨 (duck) as a nickname for male sex worker is a very modern term to make a fun contrast to chicken XDD
